Winery Inventory Strategy + Restaurant Consulting

Practical strategy for wine and hospitality businesses.

Rust Wine Company helps California wineries evaluate excess and stagnant finished-goods inventory, understand realistic recovery options and prepare for a controlled route to market.

Rust also provides opening and operations consulting for independent restaurants, boutique hotels and hospitality businesses.

Founded and led by Lannon Rust on California’s Central Coast.

The Current Market

A Market in Recalibration

California wine is undergoing a multi-year market correction. Consumer demand has shifted, distribution has tightened and excess inventory has given buyers more leverage. This does not mean the wine lacks quality or that the underlying brand lacks value. It means pricing, expectations and routes to market must reflect present conditions.

Wineries accumulate inventory for many reasons: slower depletion, changing distributor relationships, discontinued SKUs, packaging transitions, cancelled programs, back vintages or production that exceeded current demand.

Whatever the cause, inventory that remains in storage continues to consume capital. Storage, financing, insurance and operational costs accumulate while the wine becomes more difficult—not more valuable—to place.

Honest Expectations. Executable Opportunities.

Rust Wine Company evaluates the wine, quantity, packaging, timing, freight requirements and available sales channels to determine what the inventory can reasonably command in the current market.

We do not inflate expectations to secure a listing. Our objective is to pursue the strongest credible offer, structure an executable transaction and protect the winery’s primary brand wherever possible.

A strategic inventory sale may not recover the wine’s original projected margin. It can, however, convert an illiquid asset into immediate cash flow, eliminate future carrying costs and allow the winery to redirect resources toward healthier parts of the business.

We would rather provide an honest market assessment than promise a price the market will not support.

Winery Inventory Advisory

Confidential review of excess production, slow-moving finished goods, back vintages, discontinued packaging, distributor returns and inventory tied to winery transitions.

Rust helps organize the opportunity, evaluate likely channels and economics, identify obstacles and prepare the inventory for an eventual licensed placement process.

How an inventory review works.

  1. 01

    Confidential review.

The winery shares preliminary inventory information, objectives and restrictions.

  2. 02

    Opportunity assessment.

Rust evaluates product, volume, economics, timing, freight and channel fit, and gives an honest preliminary view.

  3. 03

    Decide the next step.

Wait, revise the economics, pursue an advisory project, or set up a properly licensed placement engagement later.

An inventory inquiry does not authorize Rust Wine Company to market, price, disclose, offer or sell any wine.
